From the "Guess & Know Games" screen, tap the plus button in the upper left. Momentarily a new game file will slide out on the screen, with a generic name. We'd recommend that you change it's name at this time. To do so, tap on the name. Any other game files will disappear to place the focus on this one, and you are given the opportunity to change it's name in the usual iOS manner. Tapping the "Done" key will finish this step.
Tap on the gear icon in the lower right corner of the large folder icon with the sets of question marks on it. An action sheet will appear next to the game's folder icon. Tap on the Edit icon to open the game file for editing. The selection screen will slide off to the left. While your game file is being opened there is a progress indicator spinning to let you know that your game is being opened. A full game with six categories and five questions (some with pictures) in each of three rounds can take a couple of seconds to load.
The tabs on the hanging file folders are editable in the usual way: Tap twice to pull the little piece of paper out (or press and hold) and the keyboard will come up to let you change the title of the category. A single tap switches to that category when there are more than one categories in the round, which is why we chose to use a the tap-twice and press and hold gestures.
Each question and answer pair can optionally have an image associated with it, and if you think the question is difficult enough to warrant it, you can tap the white star, turning it yellow, to indicate this is a bonus question. Bonus questions allow the selecting player to assign a bonus value to the question during game play.
Tap the "Add Image" button once to open the standard picture picker, allowing you to choose any picture from your camera roll. Should you decide you don't want a picture on this question, just press and hold the picture to clear it off.
Tap in the question column to type in your question. We put some placeholder text in there, which we clear out the first time you tap on it.
Tap in the answer column to provide the answer to your question. During game play, the answer is only displayed for all players to see when the host taps on the presented question on screen. If a TV is attached, the answer is shown to the host on the iPad screen in small gray text. We do this so the host can know the answer without having to show it to everyone. Imagine if the host didn't remember the answer and the first person to buzz in had the wrong answer? Showing the answer to everyone just so the host could be reminded would mean that question would be all done!
The area where you enter questions and answers scrolls, so just push it up with your finger to display questions underneath the keyboard.
To the far right of the category tabs is a control that lets you add up to six categories. A single tap on it will add another category tab. After you tap to add the sixth tab, the control shrinks down to prevent you from adding any more into that round.

The tabs for categories and rounds are draggable! So just drag them left or right to rearrange them. Since rounds don't really show a name in the game, we automatically rename them to indicate their position in the game. Categories don't get automatically changed like that.
